Full Recipe:
Ingredients
For the Dumplings
-
½ pound pitted fresh or thawed frozen dark cherries
-
¼ cup granulated sugar
-
1 tablespoon cornstarch
-
1 tablespoon granulated sugar (for cooking)
-
2 tablespoons unsalted butter (melted, for serving)
-
2 tablespoons superfine sugar (optional, for serving)
For the Varenyky Dough
-
3 cups all-purpose flour, plus more for dusting
-
1 teaspoon salt
-
1 whole egg
-
1 egg yolk
-
¾ cup water
-
1 tablespoon sunflower oil
Directions
-
Make the Dough:
-
In a large bowl, combine flour and salt. Make a well in the center, and add the egg, egg yolk, water, and oil.
-
Use a fork to whisk the wet ingredients together, gradually incorporating the flour until a shaggy dough forms.
-
Transfer the dough to a floured surface and knead for 5 minutes until smooth.
-
Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
-
-
Prepare the Filling:
-
In a medium bowl, mix the cherries, sugar, and cornstarch. Set aside.
-
-
Shape the Dumplings:
-
Roll the dough out to ⅛-inch thickness on a floured surface. Using a 3-inch round cookie cutter or glass, cut out circles.
-
Place 2 cherries in the center of each dough round, fold it in half to create a half-moon, and pinch the edges to seal securely.
-
Arrange the dumplings on a lightly floured sheet pan.
-
-
Cook the Dumplings:
-
Bring a large pot of water to a rolling boil and add 1 tablespoon of sugar.
-
Drop the dumplings into the boiling water, stirring gently to prevent sticking. Cook for 5-7 minutes or until they float to the top.
-
Use a slotted spoon to remove the dumplings and transfer them to a bowl.
-
-
Serve:
-
Drizzle the dumplings with melted butter and sprinkle with superfine sugar if desired. Serve immediately and enjoy!
