1 lb ground turkey

1 red onion, diced

1/2 cup jalapeños, canned and sliced

1 packet taco seasoning (1.25 oz)

1 cup Greek yogurt

1 tablespoon ranch seasoning

2 bags Cool Ranch Doritos (9.25 oz each)

11 oz frozen fiesta corn

1 can Rotel tomato and green chilies (10 oz), drained

3 cups taco cheese (or similar), shredded

Optional Garnish: Fresh cilantro, red onion, jalapeños

Prepare the Turkey Mixture: In a medium pan, brown the ground turkey with half of the diced onion and jalapeños. Once cooked, add taco seasoning, Greek yogurt, and ranch seasoning. Stir well to combine and remove from heat.

Crush the Doritos: Break one bag of Doritos into larger chunks and the second bag into fine crumbs.

Layer the Casserole: Lightly grease a 9×13-inch casserole dish. Layer half of the crushed Doritos on the bottom, then top with half of the turkey mixture, half of the corn, half of the tomatoes with chilies, and half of the cheese. Repeat the layers with the remaining ingredients.
