  1. Prepare the Fish:

    • Pat the fish fillets dry with paper towels to ensure the batter sticks well.

  2. Make the Batter:

    • In a medium-sized bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper.

    • Slowly add the cold sparkling water and whisk until smooth. If using, beat in the egg for extra crispiness.

  3. Heat the Oil:
