This Custard Croissant Slice is an indulgent dessert that combines soft croissants with a rich, creamy custard filling. Topped with a dusting of pure icing sugar, it’s the perfect sweet treat for any occasion. It’s simple to prepare and makes a beautiful presentation for a family dessert or a gathering.

40g butter, chopped

1 1/2 cups milk

300ml carton thickened cream

1/2 cup custard powder

16 Coles Bakery Mini Croissants

1/3 cup caster sugar

1 tsp vanilla bean paste

Pure icing sugar, to dust
Directions

Preheat the oven to 180°C (160°C fan-forced). Arrange the croissants on a large baking tray and bake for 5 minutes. Transfer to a wire rack to cool (they will become crisp as they cool).

In a saucepan, whisk together the custard powder, caster sugar, and 60ml (1/4 cup) of milk until smooth. Add the remaining milk and cream, and place the saucepan over medium-low heat.

Cook the mixture for 10 minutes, whisking slowly at first and more vigorously as the mixture thickens and begins to simmer. Continue to cook, stirring constantly, for another minute. Whisk in the butter and vanilla until combined.

Pour the custard mixture into a heatproof bowl and set aside to cool, stirring occasionally to release heat and prevent a skin from forming.

Grease a 16 x 26cm slice pan and line it with baking paper, allowing it to overhang on the long sides.

Using a serrated knife, carefully cut the croissants in half horizontally. Arrange enough croissant bottom halves, cut-side up, in the base of the prepared pan to cover it neatly. Cut any leftover croissants to fill in the gaps.

Drop large spoonfuls of custard over the croissant base and gently spread to form an even layer. Arrange the croissant tops, cut-side down, over the custard. You may not use all the croissants, so don’t worry about gaps.

Place the slice in the fridge for 2 hours to set. Dust with icing sugar before serving and slice with a serrated knife.
