Ingredients

  • 3 Cornish hens

  • 3 tbsp olive oil

  • 2 tbsp unsalted butter

  • 4 large cloves garlic, minced

  • 2 lemons, sliced

  • 1 large onion, cut into quarters and separated into individual slices

  • 10–12 fresh sage leaves

  • 6–8 sprigs fresh rosemary

  • 2 tbsp Old Bay seasoning

  • 2 tbsp Italian seasoning

  • 1 tbsp + 1 tsp smoked paprika

  • 1 tbsp lemon pepper

  • 1 tsp sea salt or kosher salt

Directions

  1. Prepare the Cornish Hens: Thaw the Cornish hens and pat them dry with a paper towel. For best results, allow them to rest in the fridge overnight.

  2. Prepare the Roasting Pan: Place onions, sliced lemons, and half of the sage and rosemary into a roasting pan or Dutch oven.

  3. Season the Hens: Brush the hens with melted butter, olive oil, and minced garlic. Rub the hens thoroughly with the dry rub mixture.

  4. Roast the Hens: Arrange the hens in the roasting pan. Place the remaining sage, rosemary, and sliced lemon between the hens. Roast in a preheated oven at 375°F (190°C) for 45 minutes to an hour, or until the internal temperature reaches 165°F (75°C) and juices run clear.

  5. Serve: Let the hens rest for 15 minutes before serving. Garnish with additional herbs, if desired, and serve with your favorite sides.
