Ingredients:

  • Olive oil cooking spray

  • 1 large eggplant, thinly sliced

  • 1 1/2 cups pitted kalamata olives, thinly sliced

  • 1 1/2 cups fresh white breadcrumbs

  • 1/2 cup finely grated parmesan cheese

  • 100g fetta, crumbled

  • 1 egg, lightly beaten

  • 1/2 cup chopped fresh basil leaves

  • 1 long red chili, finely chopped

  • 1/4 cup plain flour

  • Vegetable oil, for shallow-frying

  • 1 bunch rocket leaves, for serving

  • 1 lemon, cut into wedges, for serving

Directions:

  1. Cook the Eggplant: Spray a frying pan with olive oil and heat over high heat. Cook the eggplant in batches, 2 minutes per side, until golden. Let it cool before finely chopping it.

  2. Mix Ingredients: In a large bowl, combine the cooked eggplant, olives, breadcrumbs, parmesan, fetta, egg, basil, and chili. Mix until well combined.

  3. Shape Patties: Using 1/4 cup of the mixture per patty, shape it into 12 patties. Dip each patty into flour and place it on a baking tray.

  4. Fry the Patties: Heat vegetable oil in a large frying pan over medium-high heat. Cook the patties for 2-3 minutes on each side until golden and crispy. Transfer to a plate lined with paper towels to drain excess oil.

  5. Serve: Serve the patties with rocket leaves and lemon wedges for a refreshing and zesty finish.
