Ingredients

  • 6 slices bacon (or any other protein of choice)

  • ½ yellow onion, diced

  • 4-5 handfuls spinach

  • 5 large eggs

  • 1½ cups egg whites

  • ½ cup milk (any milk of choice)

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 6 slices cheddar cheese (or your preferred cheese)

  • 6 English muffins (or bagels)

Directions

  1. Cook the Bacon: In a medium skillet over medium heat, cook the bacon until crispy. Set aside on a paper towel, and remove most of the bacon grease.

  2. Cook the Veggies: In the same pan, cook the diced onions over medium heat for 5-8 minutes, until soft and translucent. Add spinach and cook until wilted. Set aside to cool.

  3. Prepare the Egg Mixture: In a bowl, whisk together eggs, egg whites, milk, salt, and pepper. Add the cooled spinach and onions.

  4. Bake the Eggs: Pour the egg mixture into a greased 13×9-inch baking dish. Bake at 350°F (175°C) for 20-25 minutes, until the eggs are set. Once cooked, allow them to cool before cutting them into 6 rounds using a cookie cutter, or use the muffin as a guide.

  5. Assemble the Sandwiches: Place the egg rounds, a slice of cheese, and the cooked bacon on English muffins. Wrap each sandwich in foil and store in the freezer.
