For the Brownies:

1 cup (115g) all-purpose flour

2 tbsp matcha powder (culinary grade)

1/2 cup (113g) unsalted butter, melted

1 cup (200g) granulated sugar

1 tsp vanilla extract

1 cup (160g) cooked or canned mochi (optional)
For the Matcha Ganache:

½ cup (120g) heavy cream

1 tbsp matcha powder

6 oz (170g) white chocolate, chopped

Prepare the Brownie Batter:
Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a medium bowl, whisk together the flour, matcha powder, and salt. Set aside.
In a separate bowl, mix the melted butter and sugar until smooth. Beat in the eggs and vanilla extract until fully combined. Slowly stir in the dry ingredients, mixing just until combined.
Fold in the mochi (if using). Pour the batter into the prepared pan and smooth it out. -
Bake the Brownies:
Bake the brownies for 25-30 minutes, or until a toothpick inserted comes out mostly clean with a few moist crumbs. Let the brownies cool completely in the pan before adding the ganache. -
