450g all-purpose flour

250ml milk, lukewarm (plus 3 tbsp for brushing)

75g sugar

12.5g fresh yeast (or 8g dry yeast)

1/2 tsp finely ground cardamom

75g butter, softened

75g chocolate chips

Prepare the Yeast Mixture:
Warm the milk to about 20°C (lukewarm). Crumble the fresh yeast into the milk and stir until dissolved. -
Make the Dough:
In a large mixing bowl, combine the flour, sugar, and cardamom. Add the milk and yeast mixture, mixing well. Use a stand mixer with a dough hook to knead for 10 minutes until the dough is smooth. Add the softened butter little by little, mixing until incorporated. -
Rest the Dough:
Stop the mixer and gently fold in the chocolate chips. Cover the bowl with a tea towel and let the dough rise for 1 1/2 hours until it has doubled in size. -
Shape the Rolls:
Once the dough has risen, divide it into 9 equal pieces. Shape each piece into a ball and place them on a baking tray lined with parchment paper. Flatten each slightly. Let the dough balls rise for an additional 45 minutes. -
Prepare the Egg Wash:
Brush each dough ball with milk or egg wash (for a shinier finish). -

Preheat the oven to 225°C (440°F) and bake the buns for 12 minutes or until golden brown. -
