Ingredients


For the Fritters:

  • ¾ cup all-purpose flour

  • ⅓ cup corn flour

  • ½ cup milk, plus 3 tbsp

  • 1 egg

  • ½ tbsp fish sauce

  • ½ tsp garam masala

  • 1 tbsp smoked paprika

  • ½ tsp cane sugar

  • ½ tsp black pepper

  • 1.5 tsp seasoned salt

  • ¾ tsp baking soda

  • 1 cup chopped scallions

  • 1 lb scallops, chopped into small pieces

  • Olive oil, for frying

  • Flaky salt, for finishing

For the Dipping Sauce:

  • ¼ cup mayo

  • 2.5 tbsp sour cream

  • 1.5 tbsp salsa macha or chili crisp

  • 3 tbsp dill

  • 1 tbsp agave syrup

  • Lemon, to taste

  • Salt and pepper, to taste

Directions

  1. Make the Fritter Batter:

    • In a bowl, whisk together the flour, corn flour, baking soda, garam masala, smoked paprika, sugar, black pepper, and seasoned salt.

    • In another bowl, whisk the egg, fish sauce, and milk. Pour this into the dry mixture and stir until well combined.

  2. Add Scallops and Scallions:

    • Gently fold in the chopped scallops and scallions into the batter.

  3. Chill the Mixture:

    • Let the fritter batter chill in the fridge for 15 minutes.

  4. Prepare the Dipping Sauce:

    • Mix together mayo, sour cream, salsa macha, dill, agave syrup, and lemon juice in a bowl. Season with salt and pepper to taste.

  5. Fry the Fritters:

    • Heat olive oil in a frying pan over medium-high heat to 350°F-375°F. Using a spoon or an ice cream scoop, drop the fritter batter into the hot oil.

    • Flatten the fritters with the back of a spoon to ensure they don’t puff too much. Fry for about 2-3 minutes on each side, or until golden and crispy.

  6. Drain and Serve:

    • Remove the fritters from the oil and drain them on paper towels. Sprinkle with flaky salt and serve hot with the dipping sauce.
