6 oz (180g) ground turkey

3 cups cauliflower rice (about 1 small head)

1 carrot, chopped

1/2 red bell pepper, chopped

1/2 tsp turmeric

2 tsp paprika

1 tsp cumin

1 tbsp pickled jalapenos

1/2 tsp black pepper

1 tsp crushed red pepper flakes

1/2 tsp coriander

2 tbsp olive oil

4 cloves garlic, minced

Cook the ground turkey in a pan with about 1/3 cup of water, covered, over medium-high heat for 4-5 minutes.

Stir in the spices: turmeric, paprika, cumin, coriander, black pepper, red pepper flakes, and 1 clove of garlic. Stir for 2-3 minutes until the extra water evaporates.

Reduce the heat to medium and stir in the chopped carrot and bell pepper. Add the cauliflower rice, 1 tbsp olive oil, paprika, and salt. Stir, then cover and cook for 3-4 minutes to combine the flavors.

Remove the lid, stir in the remaining garlic, pickled jalapenos, and the remaining olive oil. Cook for 2 more minutes, stirring constantly.
