Full Recipe:

Ingredients

  • 2 pouches Better Oats Strawberries and Cream Instant Oatmeal with Flax

  • ½ cup plain unsweetened almond milk (or any milk of choice)

  • ⅓ cup canned unsweetened full-fat coconut milk (use the thick, waxy portion at the top)

  • 1 ½ cups strawberries, chopped (divided)

  • 1 teaspoon honey or maple syrup

  • ½ teaspoon pure vanilla extract

  • 1 pinch salt

  • 1 tablespoon chia seeds

  • 1 tablespoon unsweetened coconut flakes for topping

Directions

  1. Prepare Oats: In two pint-sized mason jars, add 1 pouch of oatmeal and ¼ cup milk to each. Shake or stir well to combine.

  2. Whip the Coconut Cream: Open the coconut milk and discard the liquid portion. Whip the thick coconut portion using a handheld electric beater until light and fluffy.

  3. Make Strawberry Sauce: In a blender, pulse 1 cup chopped strawberries, honey, vanilla, and salt until it forms a sauce (a few lumps are fine).

  4. Combine: Stir chia seeds into the strawberry sauce and let it sit for 3 minutes to thicken. Then, fold the strawberry sauce into the whipped coconut cream.

  5. Assemble: Pour half of the whipped coconut cream into each mason jar over the oats. Top each jar with half of the remaining chopped strawberries and sprinkle with coconut flakes.

  6. Refrigerate: Refrigerate for 4 hours or overnight to allow the oats to absorb the liquids and the parfaits to set.

  7. Serve: Enjoy the parfaits straight from the jar or transfer to a bowl.
