  • 75g (½ cup) milk chocolate (high-quality)

  • 150g (¾ cup) unsalted butter

  • 3 eggs (room temperature)

  • 260g (1⅓ cups) granulated sugar

  • 30g (⅓ cup) cocoa powder (unsweetened, Dutch-processed)

  • 75g (⅔ cup) all-purpose flour

  • ½ tsp salt

  • 25g (2 tbsp) milk chocolate chips (high-quality)

  • 25g (2 tbsp) dark chocolate chips (high-quality)

  • 25g (2 tbsp) white chocolate chips (high-quality)

Directions

  1. Preheat the Oven: Preheat your oven to 175°C (347°F) and line a 7-inch square brownie pan with parchment paper. Lightly grease the parchment paper with oil.

  2. Melt the Chocolate: Melt the butter, dark chocolate, and milk chocolate together using a double boiler or in the microwave. Stir until smooth and glossy.

  3. Whisk the Eggs and Sugar: In a separate bowl, whisk the eggs and sugar until pale and creamy (about 5-7 minutes with an electric hand mixer).

  4. Combine Wet Ingredients: Add the melted chocolate mixture to the egg-sugar mixture, and gently mix using a rubber spatula.

  5. Fold in Dry Ingredients: Sift the flour, cocoa powder, and salt into the mixture, and fold until combined. Do not overmix.
