3 tbsp fish sauce

1 bird’s eye chili (optional), deseeded and finely minced

3 tbsp vegetable oil

1/4 cup brown sugar, tightly packed

1/3 cup ginger, finely julienned (about 5 cm/2 inches of ginger)

2 eschallots (optional), halved and finely sliced (or substitute with red onion)

Directions
1. Prepare the Chicken:
Toss the chicken with fish sauce and chili (if using). Set aside while preparing the rest of the ingredients.
2. Make the Caramel:
