Ingredients:

  • 1 tbsp olive oil

  • 20g butter

  • 200g cup mushrooms, chopped

  • 3 spring onions, thinly sliced

  • 1 red capsicum, finely diced

  • 4 zucchinis, large

  • 100g ham, roughly chopped

  • 6 eggs

  • 200g feta, crumbled

  • 125g cherry tomatoes, halved

  • 1 pinch salt and pepper, to serve

  • 1 handful mixed salad leaves, to serve

Directions:

  1. Prepare the Vegetables: Preheat the oven to 200°C (392°F). Grease a 7-cup capacity baking dish. Heat olive oil and butter in a frying pan over high heat. Add the chopped mushrooms and cook, stirring often, for about 8 minutes until golden. Reduce the heat to medium and add the spring onions and capsicum. Cook for 4 minutes or until tender. Transfer to a bowl and allow to cool.

  2. Prepare the Zucchini Ribbons: Use a vegetable peeler to run the blade down the length of the zucchinis, creating ribbons. Line the prepared baking dish with the zucchini ribbons, overlapping them slightly along the base and sides of the dish. Layer the chopped ham over the zucchini.

  3. Prepare the Egg Mixture: Whisk the eggs in a bowl and add the cooled vegetables and crumbled feta. Season with salt and pepper to taste. Pour the mixture into the prepared baking dish, spreading it evenly. Top with halved cherry tomatoes, cut side up.

  4. Bake: Place the baking dish in the oven and bake for 40 minutes, or until golden and set.

  5. Serve: Serve the bake warm with a side of fresh salad greens.
